The Fukuzenji Soba restaurant serves authentic, handmade soba noodles made using buckwheat flour sourced from the local Hida Nagareha region.

It is said the soba can be best enjoyed by eating it in four different ways. First, the noodles should be tried just by themselves. Next, try the soba seasoned with a touch of salt and wasabi to bring out the sweetness. Third, try the soba dipped in soup. Lastly, try sprinkling some provided sake on the noodles.

Vegetables are sourced from the Santera Meguri Morning Market next door, with the soba restaurant officially recognized by the prefecture for its use of local Gifu produce.

Additional note: there is a Muslim prayer space.
