Sushiro Brings Sustainable Sushi to Expo 2025

Meet the 'Fish of Tomorrow' and explore digital dining fun

From April 13th to October 13th, 2025, visitors to Expo 2025 Osaka can experience sushi dining reimagined for the future at the Sushiro Future Expo Store, located at the event's Forest of Tranquility Zone. This immersive pop-up restaurant blends eco-conscious design with a fun, forward-thinking approach to dining.

More than just a place to eat, the store invites guests to explore the future of sushi through an interactive and sustainable lens. Inside, guests are welcomed by a massive digital aquarium and lush greenery that evokes the feel of dining deep within a lantern-lit forest. The warm-toned interior features locally sourced Yoshino cedar from nearby Nara Prefecture, paying homage to Kansai's natural beauty and craftsmanship. Even after the Expo ends, the wood is set to be repurposed, continuing its life in new forms.

The commitment to sustainability runs throughout the space, from the forest-themed décor to employee uniforms made of plant-dyed, recycled textiles. Part of the goal is to show that even restaurants can reduce their environmental footprint.

As for the menu, it highlights farm-raised seafood and features the “Fish of Tomorrow” series, including land-raised sea urchin and eel. The venue also offers plant-based sushi and pork-free dishes to suit diverse dietary needs including vegetarians, vegans, and those following halal diets. And for added fun, the digital “Uni Catch Game” lets guests learn about marine sustainability while competing for limited-edition prizes.

Getting there

The Expo 2025 venue can be accessed via Yumeshima Station on the JR Chuo Line. Direct buses from locations like Kyoto Station will also operate to and from the event.
