Promising spectacular views of the Tokyo skyline from the top of Prince Hotel Shinjuku, Fuga (風雅) held its renewal opening in December 2017 in central Shinjuku.

The top-floor here offers a relaxed yet elegant and spacious venue that combines a sense of Japanese tranquility that echoes the premium Japanese flavours on the menu.

The Fuga renewal focuses on what it describes as 'Tokyo Gohan', bringing together high quality ingredients from various regions in a quintessentially Japanese style yet with a contemporary twist. Favourites, like wagyu beef, standout on a menu which is brought to life by Chef Keigo Okubo – former official chef for the Japanese ambassador in Belgium, at the Mission of Japan to the European Union and someone who should know something about appealing to overseas tastes.

The 'Fuga' dinner course invites guests to taste the whole of 'Japan', sourcing ingredients from Hokkaido in the far north, to Kyushu and Okinawa to the south. Some of the highlights include:

  • Ishikawa-sourced Kaga lotus root manju and lotus root chips with Sudachi citrus
  • Honmaguro tuna with Tamari soy sauce from the Shikoku region
  • Beef nigiri sushi
  • Wafer-thin shabu-shabu style slices of red snapper with sake-based Irizake dipping sauce
  • Wagyu teppanyaki, with wasabi, horseradish and daikon
  • Belgian waffle, served with ice cream and berries

The lunch course, Sky Half Buffet, includes a main dish, alongside appetizer, salad, dessert and buffet-style sides.

Getting there

Fuga is on the 25th floor of the Prince Hotel Shinjuku. The second floor connects directly to Seibu-Shinjuku Station, otherwise the hotel is a 5 minute to JR Shinjuku station and the subway.
