Hidemasa Yamamoto recently opened a new high-end restaurant in the center of Roppongi. Since March 1st, 2017, you can enjoy the gastronomic cuisine and beverages in a chic and cozy place.
As soon as I entered the restaurant, I was stunned by its delicate decoration. It was meticulous and refined, with nice atmosphere. Then I had the chance to try their cuisine through various dishes.
The first step was to choose a cocktail from their drink menu. From common to artistic cocktails, you can find what is the best for you. I chose one that was perfectly balanced, tasty and easy to drink. I then started the dinner with some small appetizers, including spring rolls and paté. The sauce and side dishes made the cuisine even more tasty and added another dimension to each dish.
Next I tried a smoked version of the well-known caesar salad. The smoke flavor added an unexpected, appreciable effect to this classic salad.
Then came fresh pasta with clams and cabbage. The pasta and ingredients were well combined with a pleasant taste.
I then tried the young chicken with truffle rice, one of their most popular dishes. I had to admit that the chicken was some of the most tender I had ever eaten. The rice was delicious, especially with mitsuba, a Japanese parsley.
